Chicken Chettinad is the dish our kitchen makes for people who order 'extra hot' and mean it. It comes from the Chettinad region of Tamil Nadu, and its heat is not the flat burn of chilli powder — it is built from black peppercorn, dried red chilli, star anise and curry leaves, all roasted and ground fresh so the aroma arrives before the fire does.
The chicken is cooked down until the masala tightens around it. What you taste first is the roasted spice, then the pepper, and only then the heat, which lingers rather than spikes. If most of our menu leans North Indian, this is the plate that reminds Winnipeg how wide Indian cooking really runs.
