Every Indian city has its Indo-Chinese corner, and Chilli Chicken is what it sells. Chicken is battered, fried until the crust shatters, then thrown into a screaming wok with green chilli, onion, bell pepper and a soy-and-vinegar sauce that reduces to a gloss in seconds.
The trick is timing: too slow and the crust goes soft, too fast and the sauce never catches. Ours comes out crisp at the edges, sticky where the sauce has caught, and hot enough to make you reach for a drink. It is the plate our kitchen sends out most often after 9 pm.
